Pina Colada
There's something iconic about summer vacations and pina colada's. It 100% is a summer drink so I'm going to get through this whole recipe without any rain jokes or references (that doesn't count).
This is another cocktail leading that shaken/blended double life. A delicate balance of sweet fruit flavours and creamy texture either way its served. For a smoother less icy texture when blending use frozen pineapple and coconut chunks.

Ingredients
60ml White Rum
60ml Coconut milk - not water
120ml Pineapple juice
Method Shaken
add all ingredients to a shaker with ice and shake
Strain into a tall glass - a hurricane or tiki glass will work best, over fresh ice.
Garnish with pineapple ring and fresh coconut shaving
Method Blended
To blender add rum, coconut milk, 60ml of pineapple juice, 2-3 chunks of frozen pineapple, 2-3 chunks of frozen coconut, and a few ice cubes.
Blend. Gradually add more pineapple juice as needed to achieve desired texture.
Serve in a tall glass as above and garnish.
For an extra holiday vibe, either mix can be served in an empty pineapple or coconut ... because we all have those lying around.
